The soft, non-slip surface suits high-grade knives and delicate work, and the mat is NSF-registered for hygiene in professional kitchens. Colours ship randomly, so it arrives in whatever the batch brings.
The source says it is bleach proof but recommends against the dishwasher, so hand wash and dry it flat.
