This is a Hatsukokoro Aosagi Nakiri 165mm, a Blue 2 carbon steel knife under kurouchi iron cladding, a rectangular vegetable knife for peeling, chopping and slicing vegetables.
The Aosagi is a budget friendly carbon line made in Sakai rather than the usual Tosa source for this build: a san-mai blade with a Hitachi Blue 2 core and soft iron cladding under a classic kurouchi finish, a combination the listing notes is uncommon on a Sakai knife but suits the wide, sturdy Sakai profile it is worked into. The listing rates the core at HRC61 to HRC63 and the handle is an octagonal black chacate.
The listing's spec table puts this one at a 170mm edge and 194g.
Wash with a neutral detergent after use and wipe it dry, keep it out of the dishwasher to protect the wood handle, oil the carbon blade before long storage, and sharpen it on a waterstone.
Most of our products are handmade in Japan, and sometimes the one that you receive maybe slightly different to the photo. This is very common and in no way it will affect the performance of the product.
