This is a Hatsukokoro Ginrei K-tip Gyuto 205mm in Ginsan stainless with a nashiji finish, with the kengata tip Hatsukokoro gives this family.
At the core is Hitachi Ginsan (Silver #3) stainless, which the listing rates at HRC60 to HRC62, and it credits Hatsukokoro with putting a really thin bevel and an aggressive edge on it, which is what gives the line its smooth cutting for the price, especially into dense roots and corms. The nashiji texture on the blade is a rustic pear-skin finish, and the handle is a classic octagonal ebony. The listing notes the steel is easy to sharpen and rewards frequent touching up.
