This is a Hatsukokoro Ginsan Tsuchime Honesuki 150mm, a small triangular boning knife for working around chicken bones and breaking down meat at home.
The honosuki's pointed tip and tall heel let it thread along joints without the flat edge digging in. This one is built on a Ginsan (Silver #3) stainless core at HRC60 to HRC62, the steel the listing describes as carbon-like sharpness without the corrosion worries, under a tsuchime hammered finish that also helps food release. The listing gives a double bevel edge and an octagonal black chacate handle.

Wash with a neutral detergent after use and wipe it dry rather than putting it in the dishwasher, which would damage the wood handle, and sharpen it on a waterstone when it needs it.
