This is a Hatsukokoro Ginso gyuto, the chef's knife of a line built to make an expensive steel affordable.

Ginso means silver frost, and it names the core: Hitachi Ginsan, a stainless steel with a reputation for taking a fine edge, under a stainless cladding finished in ukiba. Above the cladding line the surface carries a haze-like layer that reads as fog over water, a finish Hatsukokoro usually leaves to its higher lines, and the migaki polish runs parallel to the spine. This is the knife the source recommends for first-timers and students: good steel without the babysitting of carbon.

Stainless makes it easy to look after, but the routine still stands: wash with neutral detergent, wipe dry, no dishwasher, and a waterstone when the edge starts to push instead of bite.
