This is a Hatsukokoro Kumokage Bunka 180mm, a Blue 2 carbon knife in kurouchi over Damascus cladding, with the pointed bunka tip for detail work around the board.

Kumokage means cloud shadow: a kurouchi finish with a beaten, lightly scratched look and a blue-teal tone under the black, over gently rolling Damascus cladding and an etched Blue 2 core. The listing notes the etching buys the core a measure of rust resistance on top of the patina it will take. The listing rates the core at HRC61 to HRC63 on the family's spec tables. The handle is an octagonal black chacate.

The listing's spec table puts this one at a 177mm edge and 157g.

The carbon edge will discolour and can rust, so rinse and dry the blade as you finish cooking, oil it before long storage, and keep it out of the dishwasher, which would damage the wood handle.

Most of our products are handmade in Japan, and sometimes the one that you receive maybe slightly different to the photo. This is very common and in no way it will affect the performance of the product.
