This is a Sakai Takayuki Ginga gyuto in ZA18 stainless, offered in the 210mm and 240mm lengths, the cook's all-purpose knife at a home table.

The Ginga line mirrors a galaxy in its finish: a mirror-polished cladding of sixty-nine-layer Damascus around a ZA18 core from Aichi Steel, which the listing gives at HRC61 to HRC63. The handle is octagonal wenge wood with a black horn ferrule.

The listing carries full measurements for both sizes: the 210mm weighs 155g with a 218mm tip-to-heel length, and the 240mm weighs 171g with 246mm, both with a 2.1mm spine above the heel.

Hand wash and wipe dry after use, no dishwasher, and sharpen it on a waterstone; honing rods are not suitable for these knives.
