This is a Tamahagane San gyuto in the 210mm size, the standard length for a home cook's all-purpose knife.

The San line from Tamahagane is a sanmai blade: a VG5 stainless core hardened to HRC61 between softer stainless outer layers, with the outside given a hammered matte finish and the bevel sharpened and polished by hand.

Tamahagane is Kataoka Hamano, a knife maker in Tsubame, in Niigata, a city the listing describes as a centre of steel goods next door to the knife town of Sanjo. The handle is a stabilized wood with an integrated bolster.

Hand wash the blade and dry it at once; the stainless cladding asks for little else.
