This is a Tamahagane San petty in the 90 mm size, the smallest of the San petty sizes, for peeling and other work in the hand.
The San line from Tamahagane is a sanmai blade, a VG5 stainless core between softer stainless outer layers, with a hammered matte finish on the outside and a bevel sharpened and polished by hand. Tamahagane is Kataoka Hamano, a knife maker in Tsubame in Niigata, a city of steel goods next door to the knife town of Sanjo. The handle is a stabilised wood with an integrated bolster.
Hand wash the blade and dry it at once; the stainless cladding asks for little else.
