This is a Hatsukokoro Ginrei Nakiri 165mm in Ginsan stainless with a nashiji finish, a rectangular vegetable knife for peeling, chopping and slicing vegetables at the home table.
At the core is Hitachi Ginsan (Silver #3) stainless, which the listing rates at HRC60 to HRC62, and it credits Hatsukokoro with putting a really thin bevel and an aggressive edge on it, which is what gives the line its smooth cutting for the price, especially into dense roots and corms. The nashiji texture on the blade is a rustic pear-skin finish, and the handle is a classic octagonal ebony. The listing notes the steel is easy to sharpen and rewards frequent touching up.
The listing's spec table puts this one at a 162mm edge and 179g in the hand.
Wash with a neutral detergent after use and wipe it dry rather than putting it in the dishwasher, which would damage the wood handle, and sharpen it regularly on a waterstone.
