This is a Hatsukokoro Hayabusa SG2 Migaki Gyuto 210mm, an SG2 powdered stainless knife with a polished finish, the all-purpose chef's shape for the home kitchen.
The Hayabusa SG2 Migaki runs on Takefu Super Gold 2, a powdered stainless steel the listing describes as extremely fine-grained, able to take a keener edge than conventional steels and to hold it longer, at roughly twice the edge retention of White 2. The finish is the line's quiet point: a polished migaki surface so uniform the listing says you can barely pick out the cladding line through the polish. The listing rates the core at HRC62 to HRC64 and gives the handle as an octagonal hardwood with a black horn ferrule.
