This is a Hatsukokoro STRIX Damascus Gyuto 210mm, the all-purpose chef's shape ground thin behind the edge for the home kitchen.
STRIX is Takefu's newer powdered stainless, rated by the listing at up to HRC65, and what the listing highlights about it is kireaji, the feel of an edge biting cleanly into food, along with sharpening effort it says is close to ordinary VG10. The grind is convex and thin behind the edge, which the listing describes as balanced: penetration without the blade sticking on the way through. The cladding is a mirror-polished Damascus with a finer pattern than most, and the knife rides an octagonal handle of stabilised birch burl. The listing notes the line is produced by Sukenari to Hatsukokoro's spec.

Wash with a neutral detergent after use and wipe it dry rather than putting it in the dishwasher, which would damage the wood handle, and sharpen it on a waterstone when it needs it.
