This is a Yoshikawa Cook-Pal Ren flat frying pan, the flat-bottomed sibling of the wok line, for searing and everyday frying.

Yoshikawa makes it in Sanjo, Niigata, from steel given a high-temperature heat treatment that forms a hard oxidised layer. There is no anti-rust coating to remove before the first cook, the treated layer does not peel, and the steel's pores absorb oil as you cook, which is what stops food sticking. Season it with oil before first use, which the source walks through step by step.

It takes gas, electric and induction stoves. After each use, wash with warm water and a scrub sponge, wipe dry and store it dry; the source says not to put it in the dishwasher.
