Tsunehisa Ginsan Migaki Santoku 165mm

Imported directly from Japan.

This is a Tsunehisa Ginsan Nawame Nakiri 165mm, a Ginsan stainless knife with a rope-pattern Damascus surface, the rectangular vegetable knife for the veg prep at home.
Nawame means rope pattern, and the line's point of difference is that rope-like texture imprinted into the blade over dense nickel Damascus cladding. The listing puts it on a fairly solid foundation for the entry level: a Ginsan (Silver #3) stainless core at HRC60 to HRC62, a blade that is thin at the spine with slightly more thickness behind the edge, which the listing says trades a little entry resistance into dense food for a positive food release and a stronger edge. The handle is an octagonal burnt kashi.
The listing's spec table puts this one at a 163mm edge and 156g.
Wash with a neutral detergent after use and wipe it dry rather than putting it in the dishwasher, which would damage the wood handle, and put the sharpening work on a waterstone, which suits the clad blade better than a honing rod.
Most of our products are handmade in Japan, and sometimes the one that you receive maybe slightly different to the photo. This is very common and in no way it will affect the performance of the product.
